Summer Rice Salad is a perfect side dish or snack that is healthy and easy to make.

Remember to wash your hands thoroughly!

Serves: 6

Ingredients:

  • 200g cooked riceHaving a range of colours to add to this simple Summer Rice Salad helps to make it healthy. Adding fresh coriander adds further nutrients. A simple recipe for children to help make.
  • 1 green pepper, deseeded & finely chopped
  • 1 orange pepper, deseeded & finely chopped
  • 1 red pepper, deseeded & finely chopped
  • 1 yellow pepper, deseeded & finely chopped
  • Handful fresh coriander
  • 1 lime juiced

You will also need:

  • An apron
  • Mixing bowl
  • Mixing spoon
  • A pair of children’s scissors

Method:

Rice Salad is easy for toddlers to help make. Adding colourful fruits and vegetables makes it healthy. Children tend to enjoy eating things they have helped make.1. Place the rice into the mixing bowl

2. Add the chopped ingredients.

3. Add the lime juice.

4. Snip the coriander and sprinkle into the bowl.

5. Mix the ingredients together.

 

Add different fruit and vegetables such as raisins, grated carrot, tomatoes or cucumber if you prefer 🙂

  1. Funnily enough we have just bought ingredients yesterday to make a rice salad lol. And we normally add tuna to ours as well. However I do like the sound of yours as the lime juice makes it sound so refreshing! Now I’m thinking I’d really like to try your version. Xx #KCACOLS
