Egg and Parsley in Peppers

 Egg in colourful peppers to cook with an adult – a healthy breakfast or snack.

Remember to wash your hands thoroughly!

Serves: 3

Ingredients:

  • 1 bell pepperIndividual Peppers
  • 3 eggs
  • A handful fresh parsley
  • A handful fresh chives
  • A tablespoon olive oil

 

You will also need:

  • An apron
  • A frying pan
  • An egg spatula
  • A chopping board
  • A sharp knife
  • A pair of children’s scissors

Method:

  1. Cut the top off the pepper and remove the seeds and centres.Egg & Parsley Peppers
  2. Slice into approximately 1 cm rings.
  3. Put the frying pan on the hob and add the oil.
  4. Place the sliced pepper into the pan.
  5. Crack an egg and slowly pour into the centre of each one.
  6. Cook the eggs for 3 to 5 minutes depending on whether you like it runny or not.
  7. Remove the eggs with the spatula and snip and add any herbs that you are using.

Other things can be added if you wish – so get creative! What would you add?

    1. The contrast in taste and texture seems to work! Obviously the herb is only there for extra flavour, so I’m sure chive or any other herb would be just as good :)
